Gluten-free Apple Pie

There are so many great deserts to complete a Thanksgiving Dinner, but Apple & Pumpkin are my favorites!  Here’s a great gluten-free version of the all-American Apple pie.

Ingredients:

  • 5 Granny Smith apples, peeled, and sliced thin
  • 1 tsp cinnamon, divided
  • 1 cup + 1 tbsp sugar
  • 3/4 cup butter or Earth Balance (non-dairy butter sub.), melted
  • 1 cup gluten-free flour
  • 1/2 tsp xanthan gum (if not already in gluten-free flour)
  • 1 egg
  • salt, to taste

Directions:

Preheat oven to 350°.  Place apples in bottom of pie pan, sprayed with non-stick cooking spray.  Sprinkle with cinnamon and 1 tablespoon of sugar.  In a medium bowl, mix together melted butter, sugar, flour, and xanthan gum (if needed).  Add egg and a pinch of salt, mix thoroughly and pour over apples. Sprinkle with cinnamon and cook for 45 minutes.
