Stuffed Acorn Squash

Acorn squash is so versatile and is a perfect side to pair with Thanksgiving turkey.  This version is stuffed with veggies and quinoa for an extra boost in protein.  Enjoy!

Suffed Acorn SquashStuffed Acorn Squash

Ingredients:

  • 1 Acorn squash
  • 1 tbsp olive oil
  • 1/2 yellow onion, diced
  • 4 garlic cloves, minced
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1 Roma tomato, diced
  • 2 spinach leaves, chopped
  • 1 cup cooked quinoa
  • Kosher salt & fresh ground pepper, to taste

Directions:

Preheat oven to 375°.  Slice squash in half, remove seeds & membranes and place cut side down on baking sheet sprayed with non-stick cooking spray.  Cook for 45 minutes or until a toothpick can be easily pushed through the flesh.

Heat olive oil in large skillet.  Add onions, garlic, and spices and cook until onions are slightly translucent.  Add in diced tomatoes and chopped spinach, stir and cook for 5 minutes.  When greens have cooked down, add in cooked quinoa, salt and pepper.  Stir together and cook for an additional 2 minutes.

When acorn squash is done cooking, flip over and spoon quinoa mix into center.  Return pan to oven and cook for 10 minutes.  Serve warm.
