Pepperoni Bites

Need a quick appetizer to bring to an office party or potluck?  Check out these gluten-free pepperoni bites – they were a big hit at the recent BCS Title Game where my FSU Seminoles BEAT Auburn for the National Championship!  GO NOLES!

Pepperoni Bites

Ingredients:

  • 1.5 cups Namaste Biscuit Flour (or your own gluten-free biscuit mix)
  • 1/3 cup shortening
  • 1/2 cup water
  • 1 egg
  • 1.5 cups Manchego Cheese
  • 30 slices pepperoni, chopped

Directions:

Preheat oven to 350°.  In mixing bowl – beat together flour, oil, water, and egg until mixed well.  Add in cheese and pepperoni pieces until mixed thoroughly.  Drop a tablespoon of dough onto ungreased cookie sheets and bake for 20 minutes or until golden brown.  Serve warm!

Notes:  Serve with a side of Earth Balance original spread for the perfect biscuit bites!
