Blueberry Lemon Chia Seed Muffins

Blueberry Lemon Chia Seed Muffins

Ingredients:

  • 1 1/2 cups oat flour
  • 1 scoop vanilla protein powder (I used Plant Fusion)
  • 2 tsp baking soda
  • 4 flax eggs
  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 2 lemons zested and juiced
  • 1 cup fresh blueberries

Directions:

  1. Preheat oven to 350 degrees
  2. Mix wet and dry separately (you can make your own oat flour by putting whole rolled or quick oats in a blender). Also when making the flax eggs, mix separately and let sit before adding to the wet ingredients. Fold in chia seeds and blueberries, pour into greased muffin tin and bake for about 12 minutes.
  3. Let cool & enjoy!

  4. You can make a ‘flax egg’ by mixing 1 TBSP flaxseed meal + 2.5 TBSP water.
