Breakfast Chia Pudding

If you love chia seeds in your smoothies (like this recipe) and in your desert (like this recipe) than you are REALLY going to love this breakfast pudding!  It’s rich, it’s creamy, and you can customize it any way you want from fruity to sweet to savory.  I’ve got a few ideas to get you started – but feel free to comment below and let me know what your favorite topping combination is!  Enjoy!

Breakfast Chia Pudding Long

BREAKFAST CHIA PUDDING

Ingredients:

  • 1 cup almond milk, unsweetened
  • 1/2 cup chia seeds
  • 1/4 – 1/2 tsp vanilla extract
  • Stevia extract drops, to taste

Topping Ideas:

  • Avocado and Almond Slivers
  • Blueberries
  • Cacao Nibs & Cashews
  • Granola & Raisins
  • Cinnamon & Dried Fruit
  • Cranberries & Pistachios
  • Banana & PB
  • Bacon & Shredded Manchego cheese

Directions:  Mix almond milk, chia seeds, vanilla extract, and stevia extract in Tupperware container. Cover and refrigerate for at least 4 hours (Overnight is best). Once set, add a splash of water and stir. Spoon into serving dishes and top with your favorite breakfast treats.
