It may be 97° here in Georgia, but it is still the coolest day of the year because today is National Ice Cream Day! #NatlIceCreamDay

There’s a reason that the US is #2 in ice cream consumption (2nd only to New Zealand) and that’s because it’s pure AWESOMESAUCE! 😉  Growing up we always had ice cream for dessert so it has been a real comfort food for me from the very beginning. No matter what I will always love vanilla (which is STILL the #1 flavor in the world) but chocolate peanut butter is definitely my ultimate favorite.

This year my diet is different then it has ever been before because I chose to eliminate cow-dairy as much as possible. Needless to say, that makes today a little challenging. BUT, where there’s a will there’s a way!

Every ice cream deserves a great bowl so I have teamed up with my friends at personalcreations.com to showcase today’s dairy-free recipe: Dark Chocolate Coffee Ice Cream. It’s rich and decadent and the coconut milk really does a great job in making it creamy. And of course it’s gluten-free! I hope you enjoy it as much as we did!

Dairy Free Dark Chocolate Coffee Ice Cream

Dark Chocolate Coffee Ice Cream

Ingredients:

Directions:  Take all 5 ingredients and mix together in blender until smooth and creamy. Eat immediately or freeze for later. Coconut milk will freeze more than regular ice cream, so let thaw on counter for 10+ minutes until it softens to your liking.

Serves 2.

Note:  Brew a fresh pot of coffee and pour into ice-cube trays with lids (I got these from amazon.com). Freeze and pop some out anytime you want to add coffee to your ice cream or morning smoothie.
