Healthy Chicken Salad

A few weeks ago I was walking through my local Kroger grocery store and I found the best thing ever….wait for it…OK… it’s ORGANIC ROTISSERIE CHICKEN!

OMG! It was like a dream come true!

I used to LOVE using rotisserie chickens for a last-minute meal or for simple chicken meals like enchiladas or fajitas.  When the rotisserie chicken just melts off the bone (and saves me from hours of cooking and shredding) that’s my kind of chicken! But I decided to stop eating them the more I became aware of the antibiotics and hormones being pumped into the chickens.

Now that I know these organic beauties are available it is GAME ON!

I decided to make chicken salad like my mom used to make, but I gave it a slight health upgrade.

The basics are simple - all you need is organic rotisserie chicken, vegan mayo (I like Vegenaise), celery and red grapes. Mix together and you have got yourself a healthy lunch my friend. Eat it as is or throw it between gluten-free bread slices or my Pinterest favorite Rosemary Cloud Bread - either way it’s a win!

Healthy Chicken Salad

Ingredients:

  • 1 organic rotisserie chicken, pulled apart in bite size pieces
  • 2-3 stalks organic celery, chopped
  • 1 cup red grapes, halved or quartered
  • 1/2 cup vegan mayo (you may use more or less depending on your preference)

Directions:

Pull apart chicken and place in large bowl. Chop celery and slice grapes and toss in bowl with chicken. Start adding in 1/4 cup vegan mayo into bowl. Mix and continue adding in mayo until desired creaminess is obtained. Store in covered container in refrigerator, will last about a week (but you’ll probably eat it all before then)!
