Putting a spin on a classic recipe is the perfect way to give your dinner a family friendly makeover.

I’m a believer that any food that is a smaller version of itself is just so much more fun to eat!

Think hamburgers turned into sliders. Ice cream cakes turned into ice cream sandwiches. And a lasagna casserole turned into mini lasagna cups! Yum!

So to make dinner a little bit more exciting this week I decided to mini-mize (see what I did there) the classic meatloaf recipe. You’re going to love just how simple and fun this recipe is.

To start, grab some organic ground beef, gluten-free breadcrumbs, milk substitute, salt, pepper, onion and an egg.

Mix everything together and spread into a glass pan. Take a knife and pre-slice into 8 rectangles, then bake!

Pair your mini masterpieces with some greens and some good ol-fashioned smashed potatoes and you’ve got yourself a fun-sized meal fit for a king!

Fun-Sized Meatloves

Ingredients:

  • 1 pound grass-fed ground beef
  • 1/2 cup gluten-free bread crumbs
  • 1/4 cup unsweetened almond, cashew or soy milk
  • 1 egg
  • salt and pepper, to taste
  • 1/3 small onion, finely diced

Optional Topping:

  • 4 oz tomato sauce
  • 2 Tablespoons ketchup

Directions:

Pre-heat oven to 400°. Mix all ingredients together in a large bowl and spread into a square glass pan. Pre-slice into 8 mini-loaves and separate slightly. Bake for 20 minutes or until cooked through. If you’d like to add the classic ketchup topping mix the tomato sauce and ketchup together, spread over top of the mini-meatloaves and bake for an additional 10 minutes.
