Easy Chocolate Chip Ice Cream Sandwiches

Well, it might not be new, but it’s new to me and it’s a foodie-lover’s dream come true! There are so many fun and unique items for your home, bar, kitchen, and kids that’s it’s hard not to want everything!

While I was looking for some new kitchen gadgets, I came across this beauty and decided that I MUST have it! It’s the Mini Ice Cream Sandwich Press and it’s freaking amazing!

As soon as I got it, my little helper and I went to work creating some fun summertime ice cream sandwiches. We made them really easy to make because I’m 9 months pregnant and standing in the kitchen for a long period of time is not really an option these days and to keep my son’s attention. 😉

We had so much fun making these, that they’ll definitely come in handy again for sleepovers, birthday parties and holidays. There are a ton of ways to use it, but here’s what we did:




We picked out our favorite gluten-free cookie dough; Immaculate Gluten-Free Chocolate Chunk Jumbo Cookies (you can find them in the refrigerated section of your grocery store). We baked them up and let them cool.

Once cool, we used our sandwich press to cut the shape out of each cookie, fill the press with ice cream and then cut another cookie to make the base. Press them all together and viola! All you need now is some sprinkles and you’re good to go! Indulge now or freeze for later.

Chocolate Chip Ice Cream Sandwiches

Ingredients:

  • 1 dozen gluten-free chocolate chip cookies
  • 1 pint of your favorite ice cream
  • sprinkles

Directions:

  1. Bake (or buy - no judging) your favorite gluten-free cookies and let cool completely.
  2. Place the mini ice cream sandwich press in the center of one cookie (face up) to make shape and remove excess cookie.
  3. Using a spoon, place ice cream in press and fill until desired height is met.
  4. Place another cookie (face down) and use the press to create the base of the cookie.
  5. Keeping the cookie on the counter, press down in the center to compact the ice cream and then lift up.
  6. Pour sprinkles in a bowl and decorate ice cream edges of sandwich. Repeat until 6 sandwiches are made.
  7. Eat right away or wrap in saran wrap and enjoy when the mood hits!

Serves 6.

Note: You can also make these without the handy-dandy mini ice cream sandwich press from Uncommon Goods, by using a cookie cutter. Just cut 12 cookies with your favorite-shaped cookie cutter. Place one cookie at the base, fill with ice cream and top with 2nd cookie. Then just press together and lift cookie cutter off. Now you’re ready to dip the edges in sprinkles and indulge!
