I am rounding off #RecipeMakeover week with a super fun breakfast idea that will allow you to have your cake and eat it too!

That’s right…we’re essential going to take cake, or pancakes, to a whole new level of awesome.

To help make this fun family breakfast, I’ve partnered up with Barlean’s and 2 of their amazing products; Organic Coconut Oil {Butter Flavored} and Digestive Seed Blend.

Here’s the scoop on these two:

Butter Flavored Coconut Oil: This oil has become a household staple in our house for a few reasons. First, It’s dairy-free, gluten-free, soy-free, non-GMO, organic, Kosher, Vegan and has no trans fat or cholesterol. Secondly, it tastes just like butter with NO coconut flavor at all. Thirdly, coconut oil has so many healthy benefits like healthy heart function to weight management. And last but not least, I can use it as a 1:1 baking substitute in baking, cooking and frying under 375°.

Alright, now that you’ve got the info on these 2 amazing products from Barlean’s, let’s put them to good use!

To start, you’ll need 2 small bowls. In one, we’ll mix all the dry ingredients which include; gluten-free flour, sugar or sugar substitute, baking powder, Barlean’s Digestive Blend, salt and chocolate chips (or any fruit or nut).

In the other bowl we’ll mix the nut milk, vanilla extract and Barlean’s.

Breakfast Mug Cake for 2

Pour the liquids into the dry ingredients and mix well. Then pour into a big mug and microwave ~ 2-2:30 minutes. Let cool for 2 minutes, grab 2 spoons and enjoy your guilt-free breakfast mug cake!

Chocolate Chip Breakfast Mug Cake for 2

Ingredients:

  • 1/2 cup all-purpose gluten-free flour blend
  • 4 Tablespoons Barlean’s Digestive Blend
  • 4 Tablespoons sugar or sugar-substitute (we used Stevia extract)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon Kosher salt
  • 1 Tablespoon chocolate chips (regular or non-dairy) or your favorite fruit or nut mix
  • 3/4 cup nut milk
  • 1 Tablespoon vanilla extract
  • 2 Tablespoons Barlean’s Butter-Flavored Coconut Oil, melted

Directions:

  1. In a small bowl mix all dry ingredients together.
  2. In another small bowl mix all wet ingredients together.
  3. Pour wet ingredients into dry mix and whisk until blended well.
  4. Pour into large mug and microwave for 2-2:30 minutes or until done.
  5. Let cool 2 minutes and enjoy!
