Gluten-Free Pizza Recipe

What better way to kick-off going gluten-free than to make some comfort food!  Here’s my first ever gluten-free pizza recipe.  Enjoy!

Gluten Free Pizza @BodyRebootedGluten-Free Pepperoni Pizza

Ingredients:

  • Gluten Free Pizza Crust (I used 1 package of Bob’s Red Mill).  Follow package directions if using another brand.
  • 1.5 cups warm water
  • 2 eggs
  • 2 tablespoons olive oil
  • Yeast Packet (Bob’s Red Mill includes this)
  • 10-12 oz of your favorite pizza sauce (I used DelGrosso All Natural Old Style Pizza Sauce because it was low in sugar)
  • Buffalo mozzarella cheese
  • All natural, nitrate/nitrite free uncured pepperoni

Directions: 

In a mixing bowl, combine warm water and yeast and let it stand for 2-3 minutes.  Add eggs and oil to yeast mixture and blend on low.  Add pizza crust mix and blend on medium for 1-2 minutes.  Cover dough in bowl with plastic wrap and let it rise for 20 minutes.  While dough is rising, preheat oven to 425° F.

Grease large cookie sheet with gluten-free non-stick cooking spray.  Wet hands and spread dough out across entire cookie sheet.  Bake without toppings for 8 minutes.

Remove pizza crust from oven and top with sauce, cheese, and pepperoni.  (For a healthier version - try spinach & goat cheese or broccoli, mushrooms, & diced chicken).

Bake for 16 minutes or until cheese is browned.

New Beginnings, Gluten-Free Beer, & 120 Days with DDPYoga!

August 1st has finally arrived!  Today marks day 120 with DDPYoga and the start of my gluten-free lifestyle!  August is also my birthday month…so I know it’s going to be an AWESOME month!  :)

First things first - My check-in stats with DDPYoga.  Here’s where I stand after 120 days:

That’s a lot of inches & pounds gone that I don’t ever intend on getting back!  :)   I have also gained massive strength!  The best way I know how to measure that is to put together a video, so I’ll be working on that next week.

I got a bit excited from all the shopping around for gluten-free foods and recipe hunting, so I actually started eating gluten-free yesterday!  The first gluten-free dinner I made was pizza and it turned out awesome!  My 2 year old son ate 2 pieces and asked for a 3rd!  I’ll be posting that recipe soon.  And what goes well with pizza?  You got it!  Gluten-Free Beer!  Check out these brands below and let me know your favorite!

What inspires you?

I was recently asked what inspires me to write this blog and keep up with my health & fitness routine.  What a great question!

Well to start, my inspiration & motivation to get healthy again originated with my family.  I didn’t want to miss out on being an active part of my son’s life and I wanted to enjoy being a family, a mom, and a wife.  Now that I have healed from my wounds, lost weight, and re-gained my confidence back - there is a lot more to add to that original list.  Here is what else inspires me now:

  • LOVE - Love inspires me to stay healthy.  When I feel good about myself, what I’m eating, & how I’m feeling - it’s easier for me to show love to those I care about.  I took the time to take care of me, so now I can take care of others.
  • PEOPLE - People inspire me which in turn helps me inspire people.  By hearing other people’s stories, where they’ve come from, where they’re headed, and what they’ve overcome gives me hope and courage.  It helps me build the strength to share my triumphs and pitfalls so that others can know that they are not alone and help them learn from my experiences.  You don’t have to be perfect to inspire others, let others be inspired by how you deal with your imperfections.
  • BEAUTY - My son has taught me to stop and smell the roses.  To live in the moment.  And in those moments, I have drawn inspiration from many things.  I have seen a stranger pay for another person’s groceries without saying anything.  I have seen kids play together without judgment or regard of race.  I have seen butterflies emerge from their cocoon, flowers blossom, and heard the laughter of the neighborhood kids.  There is beauty all around us - all you need to do is stop and look.

Power Protein Shake

Originating in Mexico, this muscle-building protein shake is the perfect compliment to a kick-ass workout.

Almond Horchata

Almond Horchata -1 Serving

Ingredients:

  • 1/4 cup blanched whole almonds
  • 3/4 cup unsweetened almond milk
  • 1 tsp fresh lime juice
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cinnamon
  • Glass of ice
  • 1 Cinnamon Stick, optional garnish
  • Lime zest, optional garnish

Directions:

Place first 5 ingredients into blender and mix until creamy.  Strain several times through cheesecloth and pour over ice.  Garnish with cinnamon stick or lime zest.  Flavor will strengthen if made 1 day earlier and chilled, covered.

Happy Monday!  I hope everyone had a wonderful weekend.  Our weekend was pretty packed with play-dates, photo shoots, swim lessons, and a night out on the town…but it’s time to get back to it!  This is the big week as we go gluten-free on Thursday!  I’m pretty excited as I’ve been learning so much about our food supply over the last 2 weeks - it will feel great to know we are eating clean!

whole foods webpageOn Friday, I took a gluten-free shopping tour at Whole Foods.  The staff was incredible and so knowledgeable.  On top of the 50 page print-out they gave me of all the gluten-free products they carry, they also gave me a link to their website for all special diets.  Check it out HEREIMG_4863(picture above)  The link has diet information & recipes for gluten-free, dairy-free, low fat, low sodium, soy, vegan, sugar conscious, vegetarian, and wheat-free diets.  Conveniently, they have all gluten-free products marked with purple hang-tags and all the staff I came across were very knowledgeable about the foods they carry.  Even the beer guy pointed me to his favorite gluten-free Spanish beer, Daura.

So after the tour, I purchased some basic staples and headed home to perform a pantry raid.  As you can see - I did eliminate 2 whole shelves of food, but most of it was pasta so I wasn’t eating too bad after all!  Here’s my before & after shot:

I’ve scanned all the recipes from the cookbooks I borrowed and now it’s time to do a little online work.  But overall, I feel confident that I can start cooking clean & healthy meals.  I am a bit worried about ‘eating out’, but I’ll cross that bridge when I get to it.  For the recipes that turn out - I will most definitely be posting pictures on my instagram, facebook, and twitter accounts as well as here on my blog.  Wish me luck!! :)

Living Life at 90%

When some people hear me talking about living live at 90% they wonder why not at 100%?!  Well, let me explain.  Diamond Dallas Page came up with the phrase living life at 90% after hearing Lou Holtz say that, “Life is 10% of what happens to you and 90% how YOU react to it”.  That is a powerful statement and that’s exactly how DDP wanted to live his life and pay it forward by helping others learn to live that way too!  Learning to live life at 90% will help you adjust the way you react to the daily challenges that life throws at you.  Check out this inspirational video of DDP teaching others on how to live life at 90%: (password: ddp)

Body Image

The definition of body image is an individual’s concept of his or her own body, and for me, it was exactly what took me down depression lane.  We are our own worst enemies and we can talk really, really negative to ourselves, especially when were are not in a “good place”.

When I gained all my weight after losing our baby, I constantly beat myself up.  I would pass by a mirror and call myself ‘fatty’.  I would try on clothes and call myself ‘stupid’ for trying to fit into pants that were too small.  I was my very own bully!  And because of it, I developed a horrible body image problem that led me to my first therapist appointment ever.  In retrospect, she was amazing and without her I probably wouldn’t be as well off as I am now, but at the time I just felt like a failure.  It took a lot of sessions and the introduction of DDPYoga for me to become healthy again, but it was a long road that I would not like to go down again.

Christina @BodyRebootedThe reason I’m sharing this with you is because of an instance that occurred last night.  My husband was posting pictures of the DDPYoga Retreat on Facebook and I happened to glance over and see this picture of me.  At that very moment, I realized that I had lost a lot of weight and that it was actually me in the picture.  All this time, I saw the numbers on the scale go down, I saw the dress sizes shrink, but I never really “looked” at myself.  “Holy Cow baby, that’s me…I look good!” was what flew out of my mouth.  His reply, “I know baby! You’ve worked really hard to look like that”.  He didn’t say anything else after that, but I sat back and thought about how I never changed the view of myself.  Although I’m wasn’t speaking negatively to myself anymore, I was still envisioning myself as the heavy Christina!  Maybe I was too scared to look at the real me in fear of disappointment or maybe I built a wall to protect myself.  Either way, I’m glad it came down last night because now I feel AMAZING!  

Obviously this is something that I will have to keep in check as I had no idea I was still painting a negative body image in my mind, but now that I’m aware, I can take this experience and learn from it.  I can help others who are going through similar situations.  And I can be a better version of me.  Best @BodyRebooted

Final Weigh Day & Recaps

Today is my last ‘official’ weigh day since I completed my journey with eDiets just 2 weeks ago.  I loved the eDiets meal delivery program as it reminded me what a proper portion size is and gave me healthy, convenient meals, but it’s time to take that knowledge and apply it on my own.  I will still be referencing their online meal plans and have started writing health articles for them so stay tuned for yummy recipes & nutrition tips.  Never fear, I will still post pictures of my ever-changing body as I continue to build strength and switch to gluten-free/gmo free/non-cow dairy free eating!

I have lost 45 POUNDS!  25.75 INCHES and 5 DRESS SIZES!  Woo-Hoo!

  Check this out.  The DDPYoga program has sculpted my body so much, that I’m wearing a dress today that I wore 4 years ago and I’m 10 pounds heavier!  It must be all my new muscles! :)

Albion Fit Winner

There’s a great blog that I follow called FitThisGirl.  Mary is a personal trainer and a figure competitor/coach in MN and she writes a lot of motivational posts and speaks from the heart.  She had a contest not too long ago where you could win an Albion Dewberry Love Racer based on your comments of what you would be doing while your wore it.  Of course my answer was DDPYoga.  :)   Turns out - I WON!  I received my new workout tank in the mail yesterday and decided to give it a whirl while working out to DDPYoga’s Double Black Diamond.

First Shopping Trip = Success!

August 1st is just around the corner and I have a LOT of information to read, learn, and put into action in order to go completely gluten-free & cow-dairy free & GMO free.  This weekend my family joined me at the library so I could get a few cookbooks to start building my new shopping list.  Turns out they are all fantastic!  Cookbooks(Thank heavens for libraries, because I could not afford to purchase all these books).    There are so many new ingredients for me to become familiar with - I thought I’d purchase a few at a time so by 8/1 I’ll be ready to go!  Today’s inaugural trip was to Costco & I came home with these goodies:  Gluten Free @BodyRebooted

  • Organic Quinoa & Brown Rice (Thank heavens for the samples as I would never had thought I would enjoy eating Quinoa)
  • Unsweetened Almond Breeze Almond Milk
  • Organic Peanut Butter
  • All Natural Almond Butter
  • Pure Maple Syrup
  • and SkinnyPop!  (I actually bought this at Walgreens as it’s the only place they sell it near me)

I still have a long way to go, but it’s a good start!  I also saw organic blue agave, hemp hearts, organic golden flax, organic honey, and ancient grain granola cereal there, but I want to make sure I have a need for it before I buy it Supersized!  A friend of mine told me that if I go to Whole Foods, the staff will actually walk me around the store and point out all the Gluten Free foods, so I am totally doing that this week!  I’ll let you know how it goes.
