Thai Peanut Salad

If you were to tell my younger self that I’d be a salad lover when I got older, I would have thought you were crazy!

I don’t know when it happened exactly, but I feel like one day salads went from the most boring food item on the table to the most exciting!

Nowadays I eat around 5-7 salads each week and I’m always trying to come up with new flavor and color combinations to intrigue my palette.

Today I decided to shoot for the rainbow and threw together my version of a Thai Peanut Salad.

THAI PEANUT SALAD

Ingredients:

  • 2 cups mixed greens
  • 1/2 cup purple cabbage
  • 1/2 cup yellow bell pepper
  • 1/2 cup red bell pepper
  • 1/2 cup organic edamame
  • 1 shaved carrot
  • 1/2 cucumber, diced
  • 1/8 cup peanuts, crushed
  • 2 Tablespoons gluten-free Thai Peanut Sauce

Directions:

Start with a bowl of greens and add each ingredient to the salad in a row next to each other. Top with peanuts and drizzle with Thai Peanut Sauce. Viola! A beautiful rainbow salad that both your eyes and belly will enjoy!
