Falcons GameDay Cheesecake Bars

It’s football season and since the move to Georgia we are all in for our local team the Atlanta Falcons!

Typically we’re just college football watchers of the Florida State Seminoles, but there’s something really cool about rallying around your local NFL team. Turns out that we have one of our very own on the team too: Devonta Freeman (RB).

For our next tailgating party we decided to go all out and bring a fun dessert with our team colors of red, white & black. This recipe is super easy to make and it’s all gluten-free so everyone can enjoy as they cheer on the Falcons to victory!

To start, I used Glutino’s chocolate vanilla creme cookies. (I love these cookies because they’re the closest gluten-free cookies to Oreos!) I scraped all of the vanilla creme out of the cookies and mashed up the chocolate cookies with some sugar, butter and water to make a yummy crust. The vanilla creme doesn’t get used in this recipe, so feel free to toss or keep it aside for little indulgence when needed.

I baked the crust for 5 minutes just to help it set and then set it aside to make the filling.

The cheesecake filling is simple, yet so delicious. I took 2 softened packages of cream cheese and mixed it with sugar, eggs and vanilla until it was smooth and creamy. Once it’s ready to go, just pour over the crust and bake for 30 minutes. Letting it cool & chill is probably the hardest part as it already looks so yummy!




Once it’s cooled, the last step is to top it with some cherry pie filling. After another bout in the refrigerator you are good to go! Just cut into bars and serve chilled at your next tailgating adventure!

GameDay Cheesecake Bars

Ingredients:

Crust:

Filling:

  • 2x 16 oz packages cream cheese, softened & room temperature
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs, room temperature

Topping:

  • 1 can cherry pie filling & topping

Directions:

  1. Preheat oven to 400°.
  2. Twist Glutino cookies apart, scoop out vanilla creme and place chocolate cookies only into bowl. (You can toss the creme or save it for an indulgence later). Mash cookies and then add sugar and melted butter. Mix well. To help keep mixture together, add water 1 teaspoon at a time until moist enough (up to 3 teaspoons).
  3. Spray 8×8 pan with cooking spray very generously and press cookie mixture into bottom of pan. Cook for 5 minutes and set aside to cool slightly.
  4. Reduce oven to 350°.
  5. Blend cream cheese and sugar together until smooth. Make sure it’s free of lumps before adding in vanilla and eggs. Mix everything for 2-3 minutes and pour over top of cookie crust. Use spatula to spread cheesecake mixture evenly and bake for 30 minutes. Cheesecake is done when center is almost set. Let cool for 30 minutes, then refrigerate for 1 hour.
  6. Top cheesecake with cherry filling & topping and refrigerate for 3-4 hours.
  7. Cut into bars and serve chilled.
