Flourless Peanut Butter Cookies

If you love peanut butter as much as I do then you will LOVE these cookies!  Super easy to make, gluten-free. and they taste delicious!

Flourless Peanut Butter Cookies

Makes 3 dozen cookies


  • 2 cups natural creamy peanut butter
  • 1 cup packed light brown sugar
  • 1/2 cup Truvia Baking Blend Natural Sweetener or 1 cup granulated sugar
  • 2 large brown eggs
  • 2 teaspoons baking soda
  • 1/2 tsp Kosher salt


Preheat oven to 350° and line 4 cookie sheets with parchment paper.

Mix all ingredients in bowl on medium speed until blended well.

Press mixture together into 1″ balls and place 2″ apart on cookie sheets.  Use fork tines to create a criss-cross pattern and flatten each peanut butter ball.

Bake for 10-12 minutes until golden brown.  Let cookies rest for 3 minutes, then transfer to cooling racks.  Cookies will deflate slightly as they cool.

  2. No, I don’t imagine they would hold up or taste very good if you omitted the sugar. Sorry!
