Cheesy Potato Fans

We don’t do potatoes very often, but when we do - we go all out! Enjoy!

Cheesy Potato Fans


  • 4 baking potatoes, washed and dried
  • 1 Tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • Kosher salt and fresh ground pepper, to taste
  • Fresh parsley, chopped
  • 1/4 cup Manchego cheese, shredded

Directions: Pre-heat oven to 425°. Slice all 4 potatoes two-thirds of the way down with slices about 1/8″ thick. Carefully move sliced potatoes to baking sheet and fan slightly. Drizzle olive oil between slices and follow with minced garlic, salt, pepper, and fresh parsley. Top with shredded Manchego cheese and bake for 35-40 minutes or until potatoes are done.

Top with bacon and sour cream (or substitute) to make these loaded cheesy potato fans!

  1. Mmmm cheese and potatoes is such an amazing combo! I have never tried Manchego cheese (I don’t think) but it looks pretty tasty!

  2. Manchego is a great substitute for cheddar, but it comes from sheep. 🙂
