Lemon-Roasted Fingerling Potatoes
- 1.5 pounds mixed fingerling potatoes, sliced in half lengthwise
 - Juice of 1 lemon
 - 2 tbsp. olive oil
 - 1 tsp. kosher salt
 - 1/2 tsp. fresh ground pepper
 - 1/2 tsp. garlic powder
 
Directions:
Preheat oven to 450°F. Combine all ingredients in large bowl and toss to coat. Spread potatoes on rimmed baking sheet in a single layer. Top potatoes with remaining mixture left in bowl. Roast for 15-20 minutes or until potatoes are crispy. Turn potatoes once while cooking.
